Asian Marinated Salmon

  4 (approx 200g each) salmon fillets skinned and pin boned 1 tbs of mirin (Japanese cooking wine – optional)
  2 cloves of garlic crushed 2 tsp brown sugar
  4cm piece of ginger grated 1 tsp of groundnut oil
  2 tbs of soy sauce  
     


Please note the salmon can be substituted for other firm white fish, skinless chicken breast or beef fillet.

Mix all the ingredients together, add salmon and marinate for up to 4 hours. BBQ or pan fry the salmon until done to your liking. Accompany with 2 serves of steamed vegetables from the approved list and a 1/3 cup of cooked brown rice per person.
