Asian Marinated Salmon
| 4 (approx 200g each) salmon fillets skinned and pin boned | 1 tbs of mirin (Japanese cooking wine – optional) | |
| 2 cloves of garlic crushed | 2 tsp brown sugar | |
| 4cm piece of ginger grated | 1 tsp of groundnut oil | |
| 2 tbs of soy sauce | ||
Please note the salmon can be substituted for other firm white fish, skinless chicken breast or beef fillet.
Mix all the ingredients together, add salmon and marinate for up to 4 hours. BBQ or pan fry the salmon until done to your liking. Accompany with 2 serves of steamed vegetables from the approved list and a 1/3 cup of cooked brown rice per person.
