Chicken Meatballs In A Rich Tomato Sauce

  800g chicken breast mince ½ tsp dried thyme
  1 zucchini grated 2 x 400g tins of diced tomatoes
  1 egg white 1 red onion diced
  ½ tsp dried basil 2 tsp chicken stock powder
     


Combine chicken, zucchini, egg white, basil, thyme, salt and pepper in bowl. Leave to rest. Heat oil in a large frypan, add onion and cook until soft. Add tomatoes ad stock and bring to boil. Shape tablespoons of mixture into balls using oiled hands and add to tomato sauce. Reduce heat to low, shake pan to coat meatballs and cook over low heat for 10 minutes or until cooked. Accompany with 2 serves of steamed vegetables form the approved list and a 1/3 cup of cooked wholemeal pasta per person.
